Milled To Order For Freshness
We mill our flour largely to order so that it is fresh by the time it is delivered. The grain is milled, sieved and bagged on the same day and does not undergo any other process. This means that our flour is unbleached, unblended and without any additives whatsoever. Produced by us start to finish, our flour is a strong stoneground flour that works well in sourdough and yeast breads and can be used also in pizza dough, pastas, pastry, banana breads, etc.
Note: Spelt and einkorn flour are not gluten-free. However, both spelt and einkorn have types of gluten that are far easier to digest than modern wheat gluten.

Spelt Flour
Stoneground White Spelt Flour
This is a creamy flour produced by sieving out the bran after milling. Because it contains the oils and some of the bran from the grain, It produces bread with a caramel coloured crumb and great flavour and works well in sourdough and yeast breads.
It works well also in pizza dough, for pastry and in banana breads, etc. The gluten in spelt flour is more delicate than that of wheat flour and does not require kneading. Instead we recommend gentle folding.
Fine Wholemeal Spelt Flour
This is a finely sieved, strong wholemeal flour that works well in all bread types and is light enough also to use in confectionary products such as banana bread, brownies, etc.
Wholemeal Spelt Flour
This is a strong sieved wholemeal spelt flour that has more bran and works well in soda bread, yeasted bread and sourdough. We recommend using a half wholemeal and a half stoneground white for sourdough and yeasted breads.

Einkorn Flour
Stoneground White Einkorn Flour
Our white Einkorn flour is stone-milled and very finely sieved to produce a distinctive creamy coloured flour that is suitable for use in sourdough and yeasted breads, brownies and pizza bases.
Wholemeal Einkorn Flour
This flour is milled and sieved to produce a wholemeal einkorn flour that is suitable for use in yeast breads, sourdough breads and soda breads.
